Cinnamon Raisin Loaf Baking Instructions

Gather the Ingredients & Prepare the Gel

  • Flour Mix (includes cinnamon)
  • Psyllium Husk Packet
  • Instant Yeast - 9 g
  • Raisins
  • Water for Psyllium Gel - 200g
  • Additional Water for Bread - 220g
  • Unsalted Softened Butter - 36g. If you want to make this recipe vegan you can totally use vegan butter (I would recommend the Myokos brand).

Pour 200g of water into the mixing bowl of your stand mixer. Grab a whisk and add the packet of psyllium husk to the water while mixing the water. Mix until fully dissolved (5-10 seconds). Do this fairly quickly otherwise clumps might form and they will show up in your dough. Put aside for 30 seconds to 1 minute to allow the gel to form.

Step 2:

Mixing the Dough

  • With the psyllium husk gel that has developed and is already in the bowl of your stand mixer now add the flour mix to it, together with 9g of yeast, the extra 220g of water, the softened butter, and the raisins.

  • Mix on low speed until smooth and well combined.

  • If you would like the bread to be a bit sweeter and/or have more cinnamon flavor, mix 1/3 cup of (organic) brown sugar with 2 tbsp of (organic) cinnamon powder and add this to the dough while it's mixing. This will result in a more traditional cinnamon raisin bread flavor.

Tip: Pause the mixer and move the dough around so everything mixes evenly. Mixing with a spatula is easy. If using your hands, wet them first. The dough will be sticky.

Step 3:

Let the Dough Rise

  1. The dough will be sticky. Butter a 4.5x8.5 baking pan. Wet your hands and transfer the dough to the baking pan. Distribute the dough evenly across the top.
  2. Cover the bread with plastic wrap and allow the bread to rise for 30-40 minutes or until it's popping its head out of the pan (50% increase in volume).

Step 4:

Baking

  1. Preheat the oven to 400 degrees farenheit.
  2. After the bread has risen, uncover and brush with olive oil.
  3. Transfer to the oven and bake for 1 hr.

!! IMPORTANT NOTE ON HOW TO KEEP YOUR BREAD TASTING FRESH:

  • One of the characteristics of gluten-free baked goods is that they dry out more quickly than regular bread.
  • It is therefore recommended at the end of the day, to slice up the bread and put it in the freezer for maximum freshness. Whenever you are craving this amazing bread, just pull a slice out of the freezer and toast it in the toaster. It will taste like it came fresh out of the oven. Enjoy with your favorite topping or just like that!
  • The bread will also stay fresh in a Ziploc bag for about 2 - 3 days. While not strictly necessary, it’s recommended to toast it before eating for the best flavor and texture. Always allow the bread to cool completely before sealing it in a Ziploc bag, as trapped moisture can affect freshness.
